Hot Carob Bombs are cozy little globes of rich, velvety carob packed with a homemade carob drink mix and marshmallows. Enjoy them with your friends and family during the cool, winter months. They’re a blast to put together and even more magical to watch as they burst open when you pour steaming milk over them in your favorite mug. Give it a swirl, let all that luscious carob melt down, and boom, pure sip-worthy comfort in a cup. 100% Yummy, 0% Regret.
You will need 2” spherical molds or muffin cups
Ingredients

6 tbsps sucanat, coconut sugar, or allulose

6 tsps carob powder
6 large marshmallows or 1 cup mini marshmallows(you can use homemade, sugar free, or your favorite brand)

HOT CAROB BOMBS
Mix the carob powder and sweetener of choice in a small bowl and set aside.
Pour your carob chips into a microwave safe bowl and heat in 30 second intervals stirring until melted. It should take approximately 2 minutes. Be careful not to overheat and burn the carob. If there are just a few unmelted chips, stir until they melt, instead of heating for another 30 seconds.
Place the silicon mold on a parchment lined baking sheet or line a muffin tin with muffin cups. Add a tablespoon or so of the melted carob into each of the silicon molds or muffin cups. Using a pastry brush or the back of a spoon, coat the inside of your spherical mold with the carob or just put a spoonful in the bottom of the muffin cups.
Put the carob in the freezer for 5 minutes to harden. Take it out of the freezer and brush the sides with additional melted carob and freeze once more to build a thicker shell. Repeat 1-2 more times. If the shells aren’t thick enough they will crack when you take them out of the mold. If using the muffin cups, no need to add more carob or brush it up the sides, just keep it in the cups. Gently pop the carob shells out of the mold.
Place a microwave-safe plate in the microwave and heat for about 90 seconds, carefully remove as it will be hot. You are going to essentially “glue” the two shells together with melted carob. Take one shell and place it edge side down on the hot plate and give it a quick swirl. Place it back on the parchment lined baking sheet and add a heaping tablespoon of the hot carob mix and marshmallows of your choice. Grab another shell, melt the edges on the plate and quickly place it on top of the filled half of your carob bomb and you’ll have a fully assembled sphere! Don’t move them and let them dry completely. If you have a mini cupcake pan or something you can steady them in while they are drying please carefully place them in that. If you are using the muffin cup method, put a tablespoon of the mix on top of the melted carob, add your marshmallow(s), and pour some more melted carob over the top to cover it. Make sure the carob is not too hot or it might melt your marshmallow.
Toppings
Place your bomb into your favorite mug.
Pour 8-12 ounces(1- 1 ½ cups) of hot milk over the top. The warmer the milk, the more dramatic the explosion will be!!
Enjoy watching your "bomb" explode.
Stir & enjoy the carob decadence! Blend in a blender or with a frother if it is not completely smooth.
Add whipped cream or more marshmallows if desired and enjoy!
