Carob, originally known as St. John’s bread, is native to the Mediterranean areas such as Greece, Italy Spain and Israel; it can now be found in areas such as Australia and California. Carob grows well anywhere that citrus is grown, and it prefers dry climates that receive more than 30 centimeters of rainfall--ideal Mediterranean-type climates. The outer carob pod is dried and ground to a fine powder that can be used in baked goods, candy, drinks.
