This carob almond butter is a naturally sweet, nourishing spread that feels both comforting and wholesome. Made with just a handful of simple ingredients, it’s a delightful alternative to chocolate spreads, using carob for its rich, cocoa‑like flavor without the caffeine. Carob brings notes of caramel and toasted malt that pair perfectly with the nutty warmth of almonds. The result is a spread that feels indulgent yet supports a more balanced, health‑conscious lifestyle, rich in fiber, minerals, and healthy fats.

3 cups almonds

¾ cup sweet or unsweet carob chips
1-2 tbsp avocado oil or light olive oil

Preheat the oven to 350 degrees. On a baking sheet, roast the almonds for 10 minutes.
When there are about 5 minutes left on the almond timer, melt the carob chips. You can use a double boiler on the stovetop. If using the microwave, heat them in 30‑second intervals, stirring each time and checking to see if they are melted.
Remove the roasted almonds from the oven and allow them to cool for a few minutes — you still want them to be warm so they blend easily. Put the almonds in a food processor with 1 tablespoon of oil or in a high‑powered blender, and process until smooth and creamy. Add the other tablespoon of oil if it needs to be smoother.
Pour the melted carob into the food processor or blender and continue to process until it is fully combined. Scrape the sides of the container as necessary.
Spread generously over warm sourdough toast and let it melt into the nooks and crannies, releasing its aroma and subtly sweet flavor. It's also great in oatmeal, on fruit, or straight from the spoon. This carob almond butter is simple, wholesome, and comforting.
Store in an airtight container at room temperature for up to a week, in the fridge for up to a month.
