These healthier crispy rice treats skip the marshmallows in favor of a simple blend of nut butter and honey for natural sweetness and a satisfying chew. Lightly crisped cereal is folded together with carob chips, creating a comforting treat that feels familiar yet more nourishing. Easy to make and kid-friendly, they’re a wholesome twist on a classic favorite that doesn’t sacrifice flavor.
Ingredients

1 cup nut butter

⅓ cup carob chips
3 cups crisp rice cereal

HEALTHIER CRISPY RICE TREATS
Lightly grease a square baking dish, or two rectangular bread pans.
Add honey and nut butter to a heat-proof bowl. Heat in 30-second increments, until melted. Mix together. Carefully remove the bowl from the microwave (it may be hot).
Add cereal to a large bowl along with the melted nut butter mixture. Mix together until cereal is evenly coated.
Stir in the carob chips until mixed throughout.
Pour into prepared dish or bread pans and press down firmly with the back of a spatula. If you don’t push it down enough they won’t hold together very well. Place in the fridge to chill and firm for 2 hours.
Carefully loosen the sides of the treats with a spatula and then flip the dish onto parchment paper or cutting board to release the treats. Cut them into squares. Serve and enjoy!
Recipe Note
- If not eating them right away, store them in the fridge. They will crumble if left at room temperature.
- To make this vegan, replace the honey with maple syrup.
