These wholesome cookie ice cream sandwiches put a healthier twist on a classic treat by swapping chocolate for naturally sweet, caffeine-free carob. Made with Missy J’s bagged, artisan Organic whole wheat cookie mix, the cookies bake up soft, hearty, and perfectly balanced. These cookies create the ideal base for your favorite ice cream, whether store bought or homemade. Once cooled, simply sandwich in a scoop for a rich, creamy dessert that feels indulgent while being far more nourishing than anything you’d find in the freezer aisle.
Ingredients

1 bag Missy J’s Organic Whole Wheat Cookie Mix
1 egg

1/4th cup avocado or oil
2-3 cups of your favorite ice cream

Extra carob chips for top of cookies if desired

COOKIE ICE CREAM SANDWICHES
Follow the instructions on the cookie mix and make the cookies. Press in a few more carob chips on top of the cookies, before baking, if desired. You should be able to make 16 cookies, which will give you 8 sandwiches.
Let the cookies cool completely before assembling the ice cream sandwiches.
Once cookies are cooled, match up the cookies in equal size pairs.
Add one small to medium scoop of ice cream to one side of the cookie sandwich and top with the other cookie. Gently push the two cookie halves together a bit so that the ice cream spreads to the edges of the cookies. Do this with all remaining cookies.
Enjoy right away or wrap each one individually in plastic wrap or parchment paper and store in a freezer bag or freezer container in the freezer.
