Ingredients
1/2 cup unsalted butter, melted and hot

1 tbsp. coconut oil, melted

3/4 cup coconut sugar
1 egg

2 tsp pure vanilla
-
1/2 cup whole wheat flour (can sub all purpose or gluten free)

1/4 cup Missy J’s carob powder

1/4 tsp salt

1/4-1/2 cup of carob chips (optional)
1 8oz block cream cheese, softened
1 egg

1/4 cup honey or coconut sugar
-
2 tsp. pure vanilla

Directions
Cream Cheese Carob Brownies
Preheat oven to 350 degrees F (175 degrees C).
Lightly grease an 8 in square pan or line with parchment paper.
Mix coconut sugar, hot melted butter, and coconut oil together in a medium sized bowl. Whisk well for about a minute until it all starts coming together. Add in egg and vanilla and whisk well for another minute.
Stir in flour, carob powder, and salt just until combined. Do not over mix. Over mixing can ruin the texture of your brownies.
Pour into prepared pan and spread evenly. Set aside and make the cream cheese topping.
If desired You can reserve a 1/4 cup of brownie mix and drop it by spoonful on top of cream cheese. Swirl the layers together with a butter knife.
Beat cream cheese, egg, vanilla and honey or coconut sugar together with a mixer until smooth and creamy.
Pour cream cheese mixture over brownies and spread evenly. Sprinkle with carob chips if desired.
Bake for 20-30 minutes. They are done when the center no longer jiggles and a toothpick comes out dirty with fudge or cake like pieces on it.
Remove and allow to cool to room temperature for best texture. Can be stored in the fridge for up to a week if they last that long.
