You deserve a little happiness and our Carob Peanut Butter Bars recipe is just what you need! Let the decadent taste of carob and peanut butter transport you into a world of bliss.
Carob Peanut Butter Bars
Line an 8x8 pan with parchment paper or you can line a muffin tin and make about 10-12 pb cups depending on how thick you make your layers. See the note below if you want to make the cups.
PB mixture: In a bowl add peanut butter, honey, 2 tbs. coconut oil and sea salt (if using). Microwave for 15 – 20 seconds or use double boiler method until mixture is melted and pourable, stir to combine. Pour in the bottom of prepared pan, and place in the freezer for 10+ minutes until set.
Carob mixture: In another bowl melt carob chips and 1 tbs. coconut oil for 1 minute in the microwave, or use double boiler, stir and continue heating until carob chips are melted and smooth.
Take pan with peanut butter and pour melted carob over peanut butter. If your carob is too hot it will melt the peanut butter and they will mix instead of being separate layers. Either way tastes great. You can sprinkle with flaked sea salt if desired and then place the tray into the freezer for about 30-60 minutes to set.
When completely set, remove pan from the freezer and carefully lift the bars out by the parchment. Cut into desired amount of pieces. You should get 9-18 pieces depending on the size you cut them.
Store leftovers in the fridge. They should last at least 5-7 days. For longer storage, store in the freezer for up to 2 months.
*Note If you want to make the cups the steps are very similar. You will spoon a layer of carob in the bottom of the muffin cups, let it freeze, layer peanut butter, let it freeze, and then one last layer of carob before placing in the freezer again to set completely.
