You'll be the hit of any holiday party when you show up with a plate of these optional keto friendly and, oh, so easy, yet fancy truffles.
Ingredients

1 cup full fat coconut milk
-
1 tsp. vanilla extract
-
1 ½ cups Missy J’s unsweetened carob chips
-
1 tsp. Orange Flavor
-
½ teaspoon ginger powder
Crushed gluten free pretzels or nuts of choice.

1 ½ cups original or unsweetened carob chips.

GANACHE DIRECTIONS
In a small heat safe bowl place Missy J’s Unsweetened Carob chips
In another pan on the stovetop, heat coconut milk to just under boiling.
Pour warm coconut milk over carob chips. Leave covered and undisturbed for 3 - 4 minutes till you see the chips starting to melt.
Mix with spatula to first combine. Add vanilla extract and flavoring of choice. Whisk swiftly till smooth.
Place in the refrigerator to set up
MAKING THE TRUFFLES
Line a sheet pan with parchment paper.
Remove ganache from refrigerator. Scoop a little under 1 tbsp. and roll into balls. The warmth of your hands helps give the balls a smooth outer finish. Place each ball on the parchment paper.
On the stove top in a Bain-Marie pan, melt more carob chips to warm liquid. Pour in a bowl and set up your truffle making station on the countertop.
With a fork or candy dipping “fork” dip each ball into the warm carob, then quickly roll in the crushed pretzels or nuts of choice.
Set on parchment paper to set.

OPTIONS: Making these fancy truffles will bring out your inner "carobtier".
Flavor the ganache with peppermint and then coat with sugar free peppermints.

Use pumpkin pie spice, cinnamon or other fav spices.

Or go wild and make an "everything" truffle with nuts, pretzels, potato chips etc..
