This Carob Sponge Cake is a light and fluffy dessert with a rich, chocolate-like flavor from carob powder. Made with wholesome ingredients like coconut sugar and topped with a creamy carob ganache, it's a naturally sweet treat that's perfect for any occasion. The cake serves 12 and comes together in under an hour, making it a simple yet indulgent option for gatherings or a sweet family dessert.

Ingredients
6 large eggs (room temperature)

CAROB SPONGE CAKE
Crack the room-temp eggs into a large mixing bowl.
Add sugar and vanilla extract.
Using a stand mixer or hand mixer, beat the eggs on high speed for 15-20 minutes until they quadruple in volume and turn pale, thick, and fluffy. It should drip off the beater like ribbons.
In a separate bowl, sift together the flour, carob powder and baking powder.
Gently fold the dry ingredients into the whipped egg mixture using a spatula or whisk, stirring from bottom to top to avoid deflating the batter.
Grease and flour a 9-inch round cake pan, or line it with parchment paper.
Pour the batter into the pan and smooth the top gently.
Bake in a preheated oven at 350°F for 30-40 minutes. Do not open the oven until the 30 minute timer beeps.
Check doneness with a toothpick test, insert a toothpick in the center; if it comes out clean, the cake is ready.
Let it cool in the pan for about 10 minutes before inverting it onto a cooling rack. Let it cool completely before adding any frosting or using it in other recipes.
To make the carob ganache, heat the cream in a small saucepan for a few minutes until it starts to simmer and forms bubbles around the edges.
Pour the hot cream over the carob chips and let it sit for 3 minutes covered.
Stir together gently until it comes together and is nice and smooth.
Let it sit for a few minutes and then pour it onto the center of the cake so that it will spill over the sides.
