Ingredients
16-20 Pitted Dates
-
¼-½ cup peanut butter or almond butter
¼ cup peanuts or nut of choice
-
1 ½ cups carob chips
-
1 tsp coconut oil (this does not need to be exact)
-
2 tbsp peanut butter
-
1 tbsp coconut oil melted and cooled
CAROB DATE BITES
Optional Peanut Butter Drizzle
Directions
CAROB DATE BITES
If you have dates with pits, make a small slice down the center of the date and remove the pit.
Place the peanut butter in a piping bag, or small ziploc bag with one corner cut, and add a line of peanut butter inside the date. Place on a parchment lined baking sheet or plate.
Add a few peanuts or other nuts on top of the peanut butter. Close them up as best you can and pop them in the freezer for 5-10 minutes.
While your dates are chillin’😎, melt your carob chips with the coconut oil in a small, deep, heat proof bowl or cup, in the microwave in 20-30 second intervals, stirring well each time. Be careful not to overheat and burn your carob. Stir it well until it is smooth and creamy, adding more coconut oil if necessary.
Remove your dates from the freezer and dip each one into the carob, allowing the extra carob to drip off before placing it on the parchment lined sheet or plate. The carob will harden quickly since the dates are chilled.
You can optionally make a peanut butter drizzle for the top by mixing melted coconut oil with peanut butter and drizzling it over the tops. You can also use the leftover melted carob if desired.
Enjoy right away or store in a container in the fridge for whenever your sweet tooth is calling.
