These creamy mango popsicles are coated in a crisp carob shell for a refreshing frozen treat with a tropical flavor. The natural sweetness of mango pairs perfectly with the rich carob coating, while coconut cream or heavy cream creates a smooth, creamy texture. They’re easy to make ahead and perfect for hot summer days.
Ingredients
5 cups mango (fresh or frozen)

2 cups heavy whipping cream or canned coconut cream

¾ cup allulose or another granular sweetener

2 cups carob chips

2 tbsp coconut oil

Blend the mango, cream, and allulose in a blender until smooth. Pour the mixture into popsicle molds and insert popsicle sticks. Freeze for at least 4 hours or overnight.
Once frozen, remove the popsicles from the molds and place them on a parchment-lined tray. Return the tray to the freezer while preparing the coating.
Melt the carob chips and coconut oil together using a double boiler or microwave. If using the microwave, heat in 30-second intervals, stirring between each interval until smooth. Be careful not to overheat the carob. Pour the melted mixture into a narrow glass for easier dipping.
Dip each popsicle into the melted carob coating and allow any excess to drip off. Let the coating harden for a few moments, then place the popsicles on parchment paper. Serve immediately or store in an airtight container in the freezer.
