Treat yourself to these Decadent Carob Truffles, made with a rich, creamy ganache center and a smooth Missy J's carob coating. Naturally caffeine-free and gluten-free, these bite-sized treats are easy to customize with raspberry, mint, orange, or coffee extracts for a unique flavor. Perfect for holidays, special occasions, or everyday indulgence, these homemade carob truffles deliver a luxurious texture and delicious taste while storing well in the refrigerator or freezer for whenever a sweet craving strikes.

¾ cup Coconut Cream

1 tsp Coconut oil

Pinch Sea salt
1-2 tsp raspberry, mint, orange or coffee oil extract

Ganache Truffle Base Instructions
In a saucepan, heat coconut cream until it just begins to simmer. Do not let it boil.
Pour coconut cream all over room temperature Missy J's Carob Chips in a heat safe shallow bowl.
Let stand for 2-4 minutes to allow the chips to soften. Do not stir yet. Check to see if chips are melting.
Start slowly in the center of the bowl and whisk the mixture until combined, smooth and glossy.
Mix in flavor of choice at this stage.
Refrigerate for 1–2 hours until firm enough to scoop.
FORM TRUFFLES Scoop and roll into 1-inch balls. Place on parchment-lined tray.
Freeze briefly: Freeze for 15–20 minutes to firm up for dipping.
Carob Coating Instructions
Melt bars: Break up candy bars and melt in a double boiler or in the microwave in short bursts. Add coconut oil for smoother dipping if desired.
Dip truffles: Use a fork or skewer to dip the chilled truffles.
Let excess drip off.
Quickly sprinkle topping over the coated truffle.
LET SET: Place dipped truffles on parchment and chill in the freezer for 15 minutes to harden the shell.
Refrigerate in an airtight container for up to 1 week or freeze for up to 2 months.
