These Carob Coconut Date Rolls are a naturally sweet, no-bake treat made with wholesome ingredients like Medjool dates, coconut, and carob. They come together in minutes and make a perfect snack or healthy dessert, with a soft, chewy texture and a hint of chocolate-like flavor from the carob.
Ingredients
1 cup Pitted Medjool Dates
1 cup Unsweetened Shredded Coconut

10 whole Almonds or other nuts (optional)

1 tbsp carob powder

1 tbsp carob chips

Directions
Carob Coconut Date Rolls
Place the pitted Medjool dates in a food processor and pulse until they form a sticky paste, about 1-2 minutes. (If your dates are dry, soak them in warm water for 5–10 minutes and drain before processing.)
In a small bowl, mix the carob powder with the shredded coconut until evenly combined.
Scoop out small portions of the date paste and roll into bite-sized balls, about 1 inch in diameter.
If using, gently press an almond and a few carob chips into the center of each roll, then reshape to seal.
Roll each date ball in the shredded coconut mixture until fully coated.
Enjoy the rolls immediately, or refrigerate for an hour or until firm.
