Missy J's Frozen Carob Banana Bites recipe is a delicious and healthy sweet treat that's easy to make. With only three ingredients - carob chips, coconut oil, and bananas - these bite-sized treats are perfect for satisfying your sweet tooth without the guilt. Enjoy them straight from the freezer any time of day for a quick and tasty snack!

                1 cup carob chips 
- 
                2 tsp coconut oil 
- 2-3 bananas (yellow or with brown specks)

Directions
Frozen Carob Banana Bites
- Slice bananas into 1/4 or 1/2 inch thick bite sized pieces. 
- Place banana bites on a parchment or silicone lined baking sheet, leaving space between them, and freeze for at least 2 hours or until frozen solid* 
- When your bananas are frozen, melt carob chips and coconut oil in a small heat proof bowl, using a double boiler or in a microwave. 
- Remove the frozen bananas from the freezer and place them next to the bowl of carob on a counter or table. Put 2-3 banana bites at a time, in the bowl of melted carob and stir to cover. Be careful not to let them touch or they will stick together. Lift each banana bite out one at a time with a slotted spoon or fork, letting the excess carob drip back in the bowl. Place back on your baking sheet and repeat this process with all of your bananas. 
- Return the bananas to the freezer for 30 minutes to 1 hour. 
- If you have any extra melted carob you can stir in some nuts, seeds, or dried fruit and pour it into a parchment line container and stick it into the fridge to harden. Keep whole or cut into pieces. 
- Keep banana bites in an airtight container in the freezer for when you want a healthy sweet treat. 
- Note: *It is recommended to freeze them the day before you want them so they have plenty of time to freeze.
