Pudding, a delicious childhood comfort food that you may have ditched long ago and for good reasons too. Store bought pudding is convenient but full of unhealthy ingredients like hydrogenated vegetable oils, gmo corn starch, refined sugars, and artificial ingredients. Who wants to eat artificial ingredients? Yikes! This creamy vanilla pudding recipe is simple and delicious with wholesome ingredients. Top it off with some Missy J’s crave-worthy carob chips, fruit, and nuts and you have yourselves a wholesome breakfast or nostalgic dessert.
Ingredients
2 ½ cups whole milk or dairy free milk
3 egg yolks

¼ - ½ cup coconut sugar, sucanat, or allulose
4 tbsp arrowroot powder or organic cornstarch

¼ tsp sea salt

1 tsp pure vanilla extract

¼ cup carob chips
Dash of cinnamon
Other toppings like fruit or nuts

Directions
CREAMY VANILLA PUDDING
In a medium saucepan, whisk together milk, egg yolks, coconut sugar, arrowroot powder, and sea salt.
Cook over medium heat, whisking/stirring CONSTANTLY until pudding begins to thicken. If you leave it, it will burn or curdle.
Once thickened, continue to stir over the heat for about 15-30 more seconds.
Remove immediately from the heat, add in vanilla, and continue to stir until creamy.
Pour into serving dishes and enjoy right away warm, or chill for two hours and serve cold.
Top with carob chips and other desired toppings.
Recipe Note
If your pudding curdles or becomes chunky you can smooth it out with an immersion blender or regular blender. Be careful, because it will be very hot. Blending will cause the pudding to thin out temporarily. You will have to chill it to allow it to thicken again.
