Indulge in the heavenly blend of vanilla-infused, buttery caramel popcorn adorned with melted Australian carob chips and a hint of sea salt. A treat you simply can't resist!
Ingredients
5-10 cups popped popcorn (more popcorn for a lite caramel drizzle and less popcorn if you really want it coated)

1/2 cup butter or coconut oil

1/2 cup coconut sugar (sucanat and allulose crystalline powder also work)

2 tsp vanilla

1/2 tsp baking soda

pinch of sea salt

1/4-1/2 cup carob chips

Directions
Carob Caramel Popcorn
Make popcorn.
Melt 1 cup of butter in a medium saucepan over medium heat.
Add your chosen sweetener and stir until thoroughly mixed.
Stirring continuously, bring the butter and sugar mixture up to a boil on medium heat.
When it reaches a boil, allow it to cook for 5 minutes on medium heat without stirring.
When the 5 minutes are up, remove the pot from heat and add the vanilla. Stir to combine, and be careful as it will sputter a little when you pour in the vanilla.
After stirring in the vanilla, add in the baking soda. The mixture will start to foam and turn a paler color.
Pour the hot caramel mixture over the popcorn in a heat safe bowl. Use a heat safe spoon to gently fold the popcorn with the mixture until the kernels are all covered. Do this quickly before the caramel cools off.
Immediately pour the popcorn out onto a cookie sheet covered with parchment paper or a silpat liner. While still hot, sprinkle it with carob chips and sea salt. You want the mixture hot so the carob will melt a little and stick to the popcorn.
Let the popcorn cool. If the carob is still melty, you can pop the tray in the fridge or freezer a bit to harden it again.

Recipe notes:
If your caramel cools too much, and the carob doesn’t stick to your popcorn, you can bake it in the oven for a few minutes to melt the carob a little. Take it out and let it cool completely before eating.
