The Palm shortening imparts a light, flaky texture to a wide variety of applications.  Because Palm shortening is solid at room temperature, has a neutral taste, and is produced without hydrogenation and trans-fatty acids, it is a very useful ingredient in organic food processing.

Common uses:

  • Baked goods
  • Crackers
  • Cookies
  • Biscuits
  • Pie and tart shells
  • Breads
  • High quality creaming agent for spreads such as sandwich cookie fillings

The oil is extracted from the pulp of the palm tree fruit.  Palm trees are organically cultivated and the oil is physically extracted (by mechanical pressing) without the use of solvents or other chemical substances.  Refining of the oil utilizes the USDA NOP-approved processing aids citric acid and bleaching earth. These are not considered additives since they are removed during processing.

The palm oil is fractionated through successive steps of cooling and filtration and then the fractions are recombined in the desired proportions to make our shortening.

Directions

Use palm fruit shortening to substitute butter in recipes. To replace 1 cup of butter use 1 cup Palm Fruit Shortening with 2 Tbsp water.
