Pistachio & Raspberry Carob Pretzel Bites combine crunchy gluten-free pretzels with rich, melted carob, tart freeze-dried raspberries, and crunchy pistachios for the perfect sweet and salty snack. Easy to make in just minutes, they're ideal for holiday treats, party platters, edible gifts, or satisfying an afternoon craving. A sprinkle of flaky sea salt adds the perfect finishing touch, making every bite crisp, colorful, and irresistibly delicious.
Ingredients
2–3 cups mini gluten-free pretzels

1 cup carob chips or carob crush

1–2 teaspoons coconut oil (optional, for smoother melting)
¼ cup freeze-dried raspberries, lightly crushed
¼ cup pistachios, finely chopped

Flaky sea salt (optional, but highly encouraged)

Prep
Line a baking sheet with parchment paper. Arrange pretzels flat-side up in a single layer.
Melt the carob
In a small saucepan over very low heat (or a double boiler), gently melt the carob with 1 teaspoon coconut oil, stirring constantly until smooth.
Drip into crevices
Using a spoon or piping bag, carefully drip the melted carob into the pretzel crevices, letting it naturally pool.
Top immediately
While warm, sprinkle with crushed freeze-dried raspberries and chopped pistachios. Add a light pinch of flaky salt if desired.
Set
Freeze for 10–15 minutes until fully set.
Enjoy
Serve chilled or at cool room temperature. Store in an airtight container in the fridge for up to 7 days.
Tips
For a more dramatic look, drizzle a second thin layer of carob over the finished bites.
