Ingredients
2 pints dairy-free, sugar-free vanilla ice cream, softened
10–12 baby spinach leaves
¼–½ tsp peppermint oil or mint extract (start with less)

Directions
Carob Mint Ice Cream
Let the ice cream sit on the counter for 15–20 minutes, until it’s soft enough to blend but not completely melted.
Blend the softened ice cream, baby spinach, peppermint oil, and vanilla (if using) until smooth and a beautiful pale mint green.
Stir in the Missy J’s Carob Chips by hand so they stay whole.
Line a standard loaf pan with parchment paper, leaving enough overhang to lift the ice cream out later. Spoon the mixture into the pan and smooth the top.
Freeze for at least 4 hours, or overnight, until firm.
Lift the loaf out using the parchment paper and slice or scoop into bowls.
