These rich and decadent Carob Lava Cakes feature a warm, molten center with deep caramel-like carob flavor in every bite. Made with simple ingredients and ready in under 30 minutes, they are an easy yet impressive dessert perfect for dinner parties or cozy nights at home. Serve them warm with ice cream, fresh berries, or extra carob chips for an indulgent finishing touch.

½ cup unsalted butter

¼ cup organic, unbleached all-purpose flour
½ cup powdered sugar of choice

2 pinches sea salt
2 large eggs
2 large egg yolks

Directions
Carob Lava Cake
Spray three 6-ounce ramekins with nonstick cooking spray and dust with carob powder. This helps the cakes release easily when inverted onto a plate. Alternatively, spray half of a 12-cup muffin pan and dust with carob powder. If using a muffin pan, the recipe yields 6 cakes.
Preheat the oven to 425°F
Place the butter in a medium heatproof bowl and add the carob chips on top. Microwave on high in 20 second intervals, stirring after each, until smooth and fully melted. Set aside.
In a small bowl, whisk together the flour, powdered sugar, and sea salt. In another bowl, whisk together the eggs and egg yolks until combined. Add both mixtures to the melted carob mixture and stir gently with a silicone spatula until fully combined. If needed, whisk lightly to remove any lumps. The batter will be slightly thick.
Divide the batter evenly among the prepared ramekins or muffin cups.
Place the ramekins on a baking sheet and bake for 12–14 minutes, until the sides are set but the centers still look soft. If using a muffin pan, bake for 8–10 minutes. Slightly underbaking creates the best molten “lava” center.
Let the cakes cool for 1 minute. Carefully invert each ramekin onto a plate and remove the ramekin using an oven mitt. If using a muffin pan, gently loosen each cake with a spoon and invert onto plates.
Add desired toppings and serve immediately.
