Meet Your Farmers

Our carob source is from a single farmer in Australia that grows the world's only sweet variety of organic carob. 
Carob comes from the seed pod of the tree. Specifically the Pod, not the seeds.
All commercial carob farmers grow carob for the seeds, that are used as locust bean gum in many industries. There is high value in the seeds, not much in the pods. Most pods are used for animal food.
It makes sense that commercial carob farmers select carob varieties that have the most seeds, which also means skinny, not very tasty pods.
Just like there are big differences in a Fuji Apple vs a crab apple, so there are in carob varieties. 
Our Australian carob farmer does not grow for seeds. He grows only for the sweetest pods. This makes his carob flour the best tasting in the world.
He then roasts the pods just right and then grinds them to flour.
Our carob powder is what we get from him to make our outlandishly delicious carob products.
