I always listen for that "mmm" Andrew (husband) makes when I have him try one of my recipes. This time it wasn't just "mmm", it was, "These are the best cookies you've made." I take that seriously because he, my delicious husband, can eat anything. The flavor, the texture is just right. Pull up a glass of almond milk and dunk away. To love Missy J's, ya gotta try Missy J's. Oh, I went back to the cookie jar and noticed they were ALL GONE!

Neapolitan PB&J Vegan Ice Cream Cake INGREDIENTS: 1 can of FULL FAT coconut milk. Trader Joe’s has a great option.  1 cup Unsweetened Almond milk (or other nut milk of your choice) (I like the brand Malk Unsweetened Vanilla Almond Milk the best)  ¾ cup Unsalted Cashews 1 Pinch of Salt 1 tsp. Vanilla Carob Chip Vegan “ice cream”

Ingredients 2 1/2 cup full-fat coconut milk  3/4 cup cashews  1 - 2 tsp liquid monk fruit (or preferred sweetener) 3 - 4 tsp vanilla extract. (OPTION- 2 vanilla beans) 3/4 cup Missy J’s Carob chips (unsweetened or regular) Pinch of salt  Equipment Ice cream maker Instructions Add coconut milk, vanilla, monk fruit and cashews in a high powered blender and blend until smooth and creamy.  Pour the mixture into your ice cream maker and churn for about 20-30 minutes till a ball forms.
