Rumford baking powder has the same carbon dioxide gas release as the majority of double-acting bakery institution type baking powders. Use the typical amounts used in the various types of baked products.

- Leavening carbon dioxide is released by the reaction of sodium bicarbonate with monocalcium phosphate in the presence of moisture. About 60% is released at batter temperature, and the rest is released in the oven.
- Store in a cool, dry place and keep container tightly closed. Heat and moisture are harmful and should be avoided.
A statement from Clabber Girl about why this packaging does not claim Aluminum Free: "We recently re-designed our Rumford Baking Powder label which is why you are seeing the difference, however there were no changes to the ingredients and is still the same great formula that you expect from the Rumford Brand! The ingredient you are concerned about is ‘sodium aluminum sulfate’ which is NOT an ingredient in Rumford Baking Powder. Based on a review of all on-label claim, the decision was made by Clabber Girl Corporation to remove any ‘free’ claims that are not FDA regulated or do not have guidelines set by a certifying body. Rumford Baking Powder contains monocalcium phosphate which is a naturally occurring mined mineral which is Food Grade and GRAS.
