"Not too sweet" Banana Carob Chip Bread

caffeine free Carob dairy free gluten free soy free Sugar free

  • 3 large over ripe bananas 
  • ¼ cup melted coconut oil
  • 2 cups gluten free rolled oats
  • 2 eggs or egg substitute (chia/flax egg)
  • 1 tsp. baking soda
  • 1/4 cup liquid allulose. (I use Wholesome brand- Amazon)
  • 1 tsp monk fruit drops. (I use illinea monk fruit-Amazon
  • 1/4 cup Missy J's Carob chips (plus 1-2 tbsp for topping) 
  • 1/4 cup Missy J's Unsweetened Carob chips 

    Preheat oven to 350 F.

    Grease loaf pan or line with parchment paper "sling".

    Mix all ingredients in a blender or food processor till the batter is smooth.

    Fold in the carob chips. 

    Pour batter into the greased or lined loaf pan.

    Top with Carob chips.  

    Bake for 40-45 minutes till "toothpick clean".

    Easy Peasy.

      This looks delicious but I can’t tolerate monk fruit. Anything I can substitute it with?
